If the show is pre recorded how do they deal with the prize money at the end a person at home wins? Is it im phoning up now for a place after christmas to win or on the day the show goes on air? and how do they know in their diary in advance when to film the bonfire shows and halloween

They record the show then select the daily winner of the viewer's competition much later that's why Noel says "congratulations to you" without knowing who the person is.
They plan the schedule very carefully so they know exactly when each show is aired and the first airing must be on the day that Noel introduces it, for example "welcome to Wednesday's game" or "welcome to our St. Patrick's Day game" or such like.
